Manuka Honey Rice Bubbles / Rice Krispies Marshmallow Slice

We’re all about easy recipes - the kind you can whip together without hunting through speciality stores or buying ingredients you’ll never use again. This marshmallow slice is exactly that: quick, comforting, and made with everyday staples.
Any honey works beautifully, but Manuka adds a deeper caramel warmth that makes this slice feel a little more grown‑up. Clover or pasture honey keeps things lighter and sweeter, while UMF 20+ Manuka gives the richest flavour.
And yes - whether you use Rice Bubbles (NZ/AU) or Rice Krispies (US/UK), they’re the exact same puffed‑rice cereal made by Kellogg’s, complete with Snap, Crackle and Pop doing their thing either way.
Ingredients

4 tablespoons unsalted butter (If using salted butter, omit the additional ½ teaspoon of salt.)

300 g (10 oz) marshmallows

¼ cup Manuka honey (UMF 5+ is great; UMF 20+ gives the best flavour hit.)

½ teaspoon salt

6 cups Rice Bubbles / Rice Krispies
Method

Prep the tin. Line a 20 × 20 cm (8 × 8 inch) square tin with baking paper, leaving some overhang for easy lifting.

Melt the butter + marshmallows. In a large pot over medium‑low heat, melt the butter. Add the marshmallows and stir continuously until smooth and glossy.

Add the honey + salt. Stir in the Manuka honey and salt. The mixture should be silky and pourable.

Fold in the cereal. Remove from heat. Add the Rice Bubbles/Rice Krispies and gently fold until every piece is coated.

Press into the tin. Tip the mixture into your prepared tin. Lightly press down with a buttered spatula or damp hands — don’t compact it too firmly or the slice will be dense.

Set + slice: Let it cool at room temperature for 1–2 hours. Lift out and cut into squares.
